Prosciutto, Kiwi, and Melon

The classic combination of cantaloupe and Prosciutto is gently highlighted by a delicate triangle of kiwi which adds a bit of holiday color and a piquant flavor to this traditional appetizer.

Ingredients

1 - small ripe cantaloupe
4 ounces - thinly sliced Prosciutto
1 - kiwi fruit

Instructions

Halve the cantaloupe. Scoop out the seeds and discard. Slice each half lengthwise into four strips. Peel each strip and discard the peel. Cut each slice of cantaloupe into three sections. Set aside. Peel the kiwi and slice into 6 slices across the width of the kiwi. Cut each kiwi circle into four wedges and set aside. Slice the Prosciutto into 24 strips. Wrap a Prosciutto strip around each cantaloupe slice. Top with a kiwi wedge and affix with a toothpick to hold together. Serve immediately, or chill up to six hours before serving. Can be served chilled or at room temperature.
