Party nuts: Shanghai walnuts

Ingredients

4 cups - shelled walnuts, whole pieces or halves
1/2 cup - sugar
- Vegetable or peanut oil

Instructions

1. In medium saucepan, bring 8 cups water to a boil. Add walnuts, return to a boil, and cook for 1 minute.
2. Rinse nuts in colander under hot water. Drain well. Transfer to small bowl and add sugar. Toss well.
3. In heavy skillet, heat 1-inch oil to 350 degrees. Add half the walnuts and fry for 4 to 5 minutes, until crisp. With slotted spoon, remove nuts to sieve to drain. Sprinkle lighty with salt and mix gently to separate pieces.
4. Repeat with remaining nuts. Place on sheets of waxed paper to cool.
