Figs with Prosciutto and Mint

Ingredients

6 - ripe fresh figs
3 - paper-thin slices of imported prosciutto (prosciutto di Parma)
12 - small mint sprigs

Instructions

1. Cut the tip off the stem of each fig. Cut each fig in half lengthwise. Cut each slice of prosciutto lengthwise into 4 strips.
2. Place a mint sprig on the cut side of each fig and wrap a strip of prosciutto around each piece, securing the mint sprig in place, but allowing some of the green to show.
