Chicken and Ham Mushrooms

Ingredients

8 large - mushrooms
1/3 cup - cooked chicken, ground
1 slice - cooked ham, cooked
1 - egg, separated
2 green - onions (scallions), sliced
- salt and freshly ground black pepper
1/2 cup - white wine
1/4 teaspoon - corn starch
2 tablespoons - sour cream
- paprika

Instructions

Chop the mushroom stalks, mix with the chicken, ham, egg yolk, and onions, and season with salt and pepper. Beat the egg white until stiff and fold in. Arrange the mushroom caps in a large saucepan, top with the mixture and surround with the wine, mushrooms to a serving platter. Boil until the juices have reduced slightly. Stir in the cornstarch and cream and heat through gently. Spoon a little cream on each mushroom and sprinkle with paprika.
