Caviar Potato Bites

These elegant appetizers are very simple to make and full of surprising flavor. You can use your favorite potato in this recipe, russet, Yukon gold, sweet potatoes, and even purple potatoes work great. Light or fat free sour cream can be used in place of the plain yogurt and your favorite caviar can be used.

Ingredients

1 pound - potatoes, scrubbed and sliced into 1/4 inch rounds
- olive oil nonstick spray
6 tablespoons - fat free plain yogurt
1/4 cup - crab roe or salmon caviar

Instructions

Preheat the oven to 400 degrees. Heavily spray a baking sheet with the nonstick spray. Spread the potato slices on the baking sheet (use two small baking sheets if you do not have a baking sheet large enough for all of the potato slices to be arranged in a single layer.) Lightly spray the potatoes with the cooking spray. Bake for 12-15 minutes, or until golden brown. Flip all of the potato slices over, and rearrange the slices so they will bake evenly. Return the baking sheet to the oven and bake for about 8 minutes more, or until golden brown. Spread each potato slice with a small amount of yogurt. Dot each potato slice with a small spoonful of caviar. Serve hot or at room temperature.
