Asiago Creamers

These low fat nibbles are very simple to make. The potatoes do take a while to roast, but they can be roasted up two days ahead of time, making your preparation before the party quick and easy. These savory bites have less than 20 calories apiece, making them perfect for those watching their waistlines. Creamer potatoes are simply baby potatoes with a thin skin. You can use any small (1 1/2 -2 inches in diameter) potato for this dish.

Ingredients

24 - red or white creamer potatoes
1/2 - cup plain low fat yogurt
/2 - cup shredded Asiago cheese
1 - finely minced scallion
- paprika

Instructions

Preheat the oven to 400 degrees and lightly grease a large baking sheet. Scrub the potatoes and slice in half. Place on the prepared baking sheet, cut side down and bake until tender, about 25 minutes. Remove from the oven and let cool while you prepare the topping. Reduce the oven temperature to 350 degrees. In a small bowl mix together the yogurt, Asiago, and scallion. Flip the potatoes over and spoon the yogurt topping evenly onto each potato. Dust with paprika. Return to the oven and bake for ten minutes, long enough to warm the topping. Serve hot.

Tips

The potatoes can be roasted up to 48 hours before serving. Simply bring to room temperature before cooking. Place the potatoes on a baking sheet and place in the oven for 5 minutes while preparing the topping. Add the topping and bake as directed above. You can make these appetizers ahead of time and serve them at room temperature, but they are much better hot.
